A pecan log roll is a confectionery popularized by the roadside convenience store, Stuckey's.[1]
While it's not exactly known who created the very first pecan log roll, many would argue that it was Mrs. Stuckey who actually perfected it.
Pecan log rolls are described by the company's website as "fluffy, cherry-laced nougat wrapped in fresh caramel and pecans."
