Rumaki or rumake is an hors d'oeuvre of tiki culture origin. It was popularly served at Trader Vic's and other Polynesian restaurants in the 1950s and 1960s.[1][2]

Preparation[]

Rumaki's ingredients and method of preparation vary, but usually it consists of water chestnuts and pieces of chicken liver wrapped in bacon and marinated in soy sauce and either ginger or brown sugar, then fried or baked.[3]

Etymology[]

One of the earliest references to rumaki is on the 1941 menu of the Don the Beachcomber restaurant (Palm Springs).[4]

The name, like the dish, was probably invented at Don the Beachcomber. Its origin is unknown, although it could be short for Japanese harumaki 'spring roll'.[5]

Popular culture[]

Rumaki is featured in the Mad Men episode "A Night To Remember" (S02E08), [6] and again in the episode titled "The Runaways" (S07E05).

Rumaki is also featured in an episode of Hazel, “Luncheon With the Governor” (S04E06) and the Showtime series Weeds episode "Grasshopper" (S03E06). Andy Botwin prepares it along with stuffed mushrooms, bacon-wrapped little smokies, and chicken satay as potential hors d'oeuvres for a party. It is also mentioned in an episode of the Golden Girls and the Rugrats episode "The Turkey Who Came to Dinner".

Season 14 Episode 4 of American Dad "Rabbit Ears". Stan is attending a 60's style cocktail party in an alternate dimension that exists within a big screen TV he finds on a sidewalk. Rumaki is being served from a "Rumaki-Maker-Matic"

Season 10 Episode 11 of the Simpsons entitled "Wild Barts Can't Be Broken". Moe laments that "nobody touched my Rumaki"

It is also mentioned and served at the end of Season 2 Episode 7 of The Bob Newhart Show "Old Man Rivers".

In "The Laundry Orgy" episode of The Odd Couple, Felix asks Oscar's poker buddies if they want shredded coconut with their Rumaki.
