In 2013, Simon returned to UNLV as an assistant coach, this time under Dave Rice.[2] When head coach Dave Rice was dismissed on January 10, 2016, Simon was named interim head coach of the Runnin' Rebels. Simon led the team to a 9–8 record in 17 games as head coach. Following the season, Simon was hired as head coach for Southern Utah.[3]
