Nasi Uduk is a Melayu Betawi style rice cooked in coconut milk dish, which originated from Batavia.

Etymology[]

Nasi in Batavia dialect of Bahasa Melayu means rice. Uduk is cognate with the Standard Melayu word "aduk", means mixing.

Cooking[]

Nasi uduk is made by cooking rice soaked in coconut milk instead of water, along with clove, cassia bark, and lemongrass to add aroma. Knotted pandan leaves are thrown into the mixture to give it more fragrance. The coconut milk and spices imparts a lemak/oily, rich taste to the rice. Bawang goreng (fried shallots) is sprinkled on top of the rice before serving. Other dishes are usually served as side dishes.

Nasi uduk is usually served with lauk/dishes like ikan bilis kacang, sambal goreng kentang, gulai sayur, and semur/smoor jengkol. Humble protein sources, such as, a hard boiled egg, fried tempeh, or fried tau-hu (豆腐 in Hokkien language), can also be included in the package.

Sambal is a very important part of Nasi Uduk, that it will either make or break the dish itself. Usually the traditional Melayu Betawi sambal is Sambal Kacang, made from peanuts, chilli, onion, etc. The taste of the sambal is spicy hot and savoury with a hint of sweet and sour.

Each neighbourhood in Jakarta (modern day Batavia) has its own variant of the dish. Kebon Kacang area in Tanah Abang in Central Jakarta is renowned for its nasi uduk with Arab influence, blending Melayu and Middle Eastern cuisine.[1]

Nasi uduk is a popular dish for the busy commuters in Jakarta, mainly because it is affordable (one serving costs on average Rp10,000 or about US$0.77). It can be found throughout the day; some roadside stalls open exclusively in the morning, noon, or night, depending on the demographics of the surrounding area. Stalls near residential areas, marketplaces, train stations, and schools are usually open from morning to noon, while the ones near offices and street-side are usually open afternoon to midnight.[2]
